Menu Plan Monday

Monday: French sandwiches with potato chips

These sandwiches aren't really "French," per se, but when my husband and I honeymooned in France, we ate sandwiches just like this at every opportunity. Just take some crusty bread, spread a thin layer of mayonnaise on each side, and fill them with sliced salami, provolone, and pickles. They're delicious! Very satisfying, and while not the healthiest meal on earth, not fast food either.

Tuesday: Red beans and rice

I don't like to admit it, but I use Zatarain's mixes. My mom's from Louisiana, so I grew up eating lots of authentic Louisiana food. Zatarain's is pretty close! I plan to add an onion and a green bell pepper (chopped and sauteed in olive oil) to the mix and use chicken broth instead of water.

Wednesday: Leftover red beans and rice

I have a 5:00 appointment with my therapist, and later we plan to go to a local hospital's Doula Night to meet some local doulas and hopefully hire one to attend the birth. It'll be a very busy evening, so leftovers are definitely the way to go.

Thursday: Garlic parmesan spaghetti with Caesar salad

I've never made this particular spaghetti dish before, but I can't envision it not being delicious. I plan to heat some olive oil and chopped garlic on the stove, cook the spaghetti, then mix the two and top generously with parmesan. Caesar salad is easy: chopped Romaine, Caesar dressing, parmesan, and croutons. Simple and tasty.


Friday: Leftover garlic parmesan spaghetti with Caesar salad

I don't know about everyone else, but I always really look forward to leftovers. I usually enjoy our meals so much that I'm excited to eat them again!

Saturday: Cheeseburgers with roasted seasoned potatoes and chocolate cherry cake for dessert

We're having my husband's parents over for dinner. My husband's cheeseburgers are very simple: ground beef, an egg, finely chopped onion, black pepper, red pepper. Topped with cheese, pickles, ketchup, and mustard. Mmm! For the potatoes, I pick up a $1 seasoning mix at Kroger (I think it's made by Concord Foods, and you can find it by the onions and potatoes), slice some potatoes into wedges, coat them in olive oil and seasoning, and roast them for about 40 minutes. We like them with ketchup. As for the chocolate cherry cake, it's embarrassingly easy. It's basically devil's food cake mix with cherry pie filling mixed in. A super gooey chocolate icing goes on top and kind of melts into the cake. It's divine.

Not sure about next Sunday.

mmm.. You eat very simliar to us. I made spaghetti last night! And we usually like making homemade burgers & potato wedges on the weekends too! :)
